It is National Nutrition Month and this year's theme is "Put Your Best Fork Forward." We all have the opportunity to pick food choices that will help us nourish our bodies. We should be picking foods that are high in fiber, vitamins, and minerals and low in simple sugar, saturated fat, trans fat, and sodium.

Healthy Eating Tips

  • Pick brightly colored fruits and vegetables, try to get 5 1-cup servings a day.
  • Eat lean proteins such as beans, lentils, fish, and chicken or turkey without the skin on it.
  • Half of your grains should be whole grains. Pick brown rice and 100% whole-wheat bread.
  • Pick flavored water as a beverage instead of soda.

Eating healthy does not need to be expensive. Make sure to compare nutrition labels. Pick produce that is in season or even utilize frozen fruits and vegetables. For a protein source pick dried beans and lentils that can be stored for a long period of time and prepared easily. Reuse those leftovers that are taking space in the fridge.

This recipe of the month can help us get creative when it comes to reusing leftovers, picking a lean protein, and adding a vegetable serving during the day:
