I love to start each year off in a fun and creative way. My goal for 2017 is to start each day off in the same way by adding an easy, creative breakfast! As a Registered Dietitian I know how beneficial a good breakfast can be but am able to come up with a few excuses as to why I can't eat breakfast. The one that always seems to get me is "I woke up too late." So to help myself succeed I had to find a way to have a well-balanced breakfast that is easy to store and ready for me to grab and go in the morning. My favorite option I have run across is overnight oats.

  • Liquid (milk and/or yogurt) to oats needs to be equal amounts. You can also use any milk alternatives, non-fat, or low-fat milk.
  • Other topping ideas:
    • frozen berries
    • dried fruit
    • banana
    • apple
    • yogurt
    • vanilla
    • honey
    • nuts
    • seeds
    • hazelnut spread
    • The list can go on and on!
  • For extra oomph: add 1 Tablespoon of chia seeds, this can also thicken the oats.
  • Warm it up: If you prefer to eat the oatmeal hot, make sure you use a microwave safe container. I still used the mason jar but made sure to remove the metal lid. I microwaved it for 1 minute, stirred, and microwaved again for 30 seconds.
